- 2 cups shredded cooked chicken
- Cook 1 package 20 oz cheese tortellini as directed on the package
- 2 cups fresh spinach roughly chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup mozzarella cheese shredded
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic minced
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Preheat your oven to 375°F (190°C).
Sauté garlic in a little oil until fragrant (I use my large skillet!).
Mix in the cream, chicken broth, and Italian seasoning. Stir to combine.
Simmer the mixture and add spinach. Cook until wilted.
Add the shredded chicken, and cooked tortellini, and ensure everything is coated.
Place the mixture in a baking dish and top with mozzarella and Parmesan cheese.
Place in the oven and bake for 20-25 minutes or until the cheese is nice and bubbly + a golden color.
Allow it to rest for 5 minutes before serving.
