For the Crust

- 1/2 cup cottage cheese (full-fat)
- 1/4 tbsp salt
For the Special Big Mac Sauce
- 3/4 cup mayonnaise
- 1 tbsp yellow mustard
- 2 tbsp sweet pickle relish
- 2 tbsp granulated sugar
- 1/2 tbsp white wine vinegar
For the Toppings
- 1/2 pound lean ground beef (80/20 fat ratio)
- 1 tbsp yellow mustard
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1/2 tbsp salt
- 1/4 tbsp black pepper
- 3/4 cup shredded cheddar cheese
- 1/2 cup shredded iceberg lettuce
- 1/4 cup diced white or yellow onions
- 6-8 dill pickle slices
- 1 tbsp sesame seeds
Prepare the Dough
In a mixing bowl, combine self-rising flour, cottage cheese, and salt.Mix until a slightly sticky dough forms.Roll out onto a floured surface to about ¼-inch thickness.Create a slightly thicker edge for a crispy crust.
Pre-Bake the Crust
Preheat oven to 425°F (218°C).Place the crust on a greased pizza pan or stone.Bake for 5-7 minutes, then set aside to cool slightly.
Make the Big Mac Sauce
In a bowl, whisk together mayonnaise, mustard, pickle relish, sugar, and white wine vinegar.Set aside in the fridge.
Cook the Ground Beef
Heat a skillet over medium heat.Add the ground beef and cook until browned, about 5-7 minutes.Drain excess fat and season with mustard, garlic powder, onion powder, salt, and black pepper.

Spread half of the Big Mac sauce over the pre-baked crust.Sprinkle ½ cup shredded cheddar cheese as the first cheese layer.Evenly spread the cooked beef over the cheese.Add the remaining ¼ cup cheddar cheese on top.

Let the pizza cool for a few minutes.Top with shredded lettuce, diced onions, and pickle slices.Drizzle with remaining Big Mac sauce and sprinkle sesame seeds around the crust.
